Sausage is one of the oldest forms of processed foods. Many people believe that it was the first processed meat product. Most cultures and ethnicities have their version of sausage. At the Cabal Sausage Company, our focus is on “chorizo.”
Chorizo is a sausage with its flavors reminiscent of Spain and Portugal. Our chorizos are not smoked and are made of fresh pork or chicken. We are as discriminating about what goes into our chorizos as great winemakers are about selecting grapes for fine wines.
Only the finest cuts of meat and the most flavorful spices are used by our sausage makers. Our fresh chorizos are made with natural hog or lamb casings and are designed for the grill.
